Introduction

Easy, really good and low in calories. This is one of my favorites go to recipes.
Can be served as a main dish, served cold in salads, in a pits or wrap, or cooked with egg whites for a quick, easy meal.

Ingredients

    red peppers
    onions
    tomatoes
    celery
    zucchini
    eggplant
    parsnip
    cabbage
    tofu

Directions

Cut all vegetables into large chunks.
Roast in 400 degree oven for 45 to 60 minutes.
Cube and marinate tofu in Bragg liquid or soy sauce.
Combine all ingredients and season with you choice of spices.
