Ingredients

    Olive Oil, 1 tbsp (remove)
    *Turkey, Ground turkey, 93% lean, 8 oz (remove)
    Onions, raw, 1 cup, chopped (remove)
    *archer farms roasted garlic couscous, 2 cup (remove)
    Yellow Peppers (bell peppers), 4 pepper, large (3-3/4" long, 3" dia) (remove)
    Bush's, Black Beans, 1 cup (remove)
    Sweet Corn, Fresh, .5 cup (remove)
    Salsa, 1 cup (remove)
    *Cheese, Kraft Colby Cheddar, 1.7 oz (remove)

Tips

For an extra flair, add a little cilantro and garnish with a couple avocado slices.


Directions

Halve the peppers and lightly coat in olive oil. Place in pan and roast for about 20-25 minutes at 400. Meanwhile cook the turkey and prepare the couscous. Separately cook the onions until soft. Mix cooked turkey, onions, couscous, corn and salsa. Let peppers cool enough to handle and carefully spoon turkey mixture into each half. Cook another 10-20 minutes at 400 until the pepper is cooked through. Sprinkle the cheese over the top and cook another two minutes.
