Ingredients

    20 oz ground turkey
    1 onion, chopped
    1 can black beans, rinsed and drained
    1 can corn, rinsed and drained
    1 can diced tomato
    1 large red pepper diced
    3 Tbs Chili powder (or to taste)
    1 Tbs Balsamic (or other) vinegar (to taste)
    1 Tbs Cumin powder
    Dash Tabasco

Tips

Serve with sprinkle of low fat cheese and/or sour cream.


Directions

heat 1/2 cup water in large skillet, add onion and turkey and saute until onion is soft and turkey no longer pink.
Add beans, corn, tomato, pepper and seasonings (to taste). Simmer for at least 30 minutes up to 1 hour.
