Introduction

This is a soft juicy meatloaf that really makes a family dinner easy and delicious! This is a soft juicy meatloaf that really makes a family dinner easy and delicious!
Number of Servings: 9

Ingredients

    2lb 4oz ground beef (lean)
    1 stalk of celery finely grated
    1.5 large onions finely grated
    2 large eggs beaten
    1/4 cup ketchup
    4 tsp mustard (brown mustard is good)
    1.5 slices white bread crumbs freshly made
    dash of salt
    dash of black pepper
    1/3 cup skim milk


Directions

Mix the grated celery, onions, bread crumbs and milk in one large bowl. Mix the ketchup, mustard, eggs, salt and pepper in a separate bowl until well combined. Combine the two bowls together with the ground beef until just blended, do not overmix. Put all of the ingredients into a loaf pan and pat down until evenly dispersed. Place in 400 degree oven for 50 minutes. Let sit for 15 to 20 minutes before serving.

Serving Size: Makes about 9 slices in adult portions
