Introduction

Adapted (heavily) from Sonoma Diet Adapted (heavily) from Sonoma Diet
Number of Servings: 4

Ingredients

    2 cups peeled, seeded, and diced cucumber
    .5 cup peeled diced celery
    1.5 cups cooked wild rice
    1 cup shredded chicken
    2 scallions, chopped
    2 tablespoons dill, chopped
    5 tablespoons of (.25 cup lemon juice, .25 cup olive oil, 1 tsp diced garlic)
    2 tablespoons toasted slivered almonds, rough-chopped
    salt and pepper to taste

Directions

Put cucumber and celery in a bowl. Sprinkle with salt and pepper. Allow to sit for 5 minutes. Add rice, chicken, scallions, dill, and lemon dressing. Stir together. Add almonds, fold in.

Serve immediately or allow to "mesh" overnight in the fridge.
