Ingredients

    1/4 cup black beans
    2 Tbsp I Can't Believe It's Not Butter (Light)
    2 Tbsp unsweetened applesauce
    1 cup granulated sugar
    6 Tbsp powdered baking cocoa, unsweetened
    2 eggs
    1/4 tsp salt
    1/2 cup flour
    1/2 tsp vanilla extract (or peppermint, orange, almond, etc)

Directions

Preheat oven to 350 F.

Blend together beans, applesauce, and ICBINB, then add sugar, cocoa, and eggs. Mix until smooth. Combine salt and flour, then add to sugar mixture and mix well. Add extract.

Spray mini muffin pan with cooking/baking spray or use baking cups. Drop 1 Tbsp of batter in to each reservoir and bake for 12 minutes (test with toothpick before removing from oven.)
