Ingredients

    1 pound 93% Lean Ground Beef
    1 can Cream of Celery Soup
    1 can Cream of Chicken soup
    1 small can Enchilada Sauce
    1 bag Corn Tortilla Chips, 16 oz
    8 oz Shredded Cheddar Chesse
    1 can Black olives, medium

Directions

Brown ground beef in sauce pan, drain if needed. Stir in soups and enchilada sauce. Add water to thin if necessary. Heat through.

Layer half of the tortilla chips in the bottom of 9X13 casserole dish. Spoon half of the sauce mixture over chips. Top with half the cheese. Repeat, using the remainder of chips, sauce and cheese. Top with black olives.

Bake in a 350 degree oven until cheese is melted and chips are tender, approximately 20 minutes.

    Incredible!
    My family says this is going into the family meal plan at least once a month. I just exchanged ground turkey for ground beef. - 1/20/09

    In order to cut the fat and sodium down considerably, I've taken to using plain corn tortillas instead, tearing them accordingly to fit the pan.
