Introduction

This is one of my favorites, but it is a bit garlicky, so adjust the garlic according to your taste. I like this on a bed of sauteed fresh spinach, with more garlic - if you dare. Ingredients

    1 TBSP. olive oil
    6 cloves garlic, minced
    48 grape tomatoes
    1 tsp. dried basil
    1/4 cup vegetable broth
    2 - 5 oz. tilapia fillets
    salt and pepper to taste

Tips

This dish looks really colorful when I use a mixture of both red and yellow grape tomatoes, and fresh chopped basil. It's also a good way to use up grape tomatoes that are starting to wrinkle and look less than perfect.


Directions

1. In a baking dish, combine grape tomatoes, garlic, and basil. Drizzle with olive oil and vegetable broth. Bake at 400 degrees until the tomatoes are starting to get soft and shrivel, about 20 minutes.

2. Remove from oven and nestle the tilapia down into tomato mixture, spooning some of the tomatoes on top of the fish. Sprinkle with a little additional basil.

3. LOWER oven temperature to 375 degrees.

4. Bake for 20-25 minutes, or until fish is cooked through.
