Ingredients

    1 lb ground beef, extra lean
    2 10oz cans of red enchilada sauce
    1 16oz can of refried beans
    2 cups shredded chedar cheese
    1/4 cup salsa
    8 flour tortillas

Directions

Preheat oven to 375 degrees. Brown the hamburger. Drain off excess grease. In same pan add 1 cup cheese, refried beans, salsa, and 1 can enchilada sauce. Mix together. Divide into 8 portions, spoon into each tortilla, wrap and place in greased 9x11 baking dish. Over pan of enchiladas pour remaining can of enchilada sauce and the last of the cheese (this amount can be halved to cut calories and fat). Bake for 15 to 20 minutes. Serves 8.

    Very tasty. I liked the fact that all the ingredients get mixed together in the pot. The sodium content is high on this recipe and I probably would not make it often because of that but we enjoyed it. - 6/17/08
