Introduction

Number of Servings: 50

Ingredients

    1 3/4 cup flour
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    1/2 teaspoon organic cinnamon
    2 cups old fashioned oatmeal (dry)
    1/2 cup chopped pecans
    1/2 cup raisins
    1/2 cup plum amazins (diced dried plums)
    1 1/4 cup white, cane sugar
    2 eggs
    6 tablespoons sorghum molasses
    1/2 cup butter (salted ok)

Tips

No not overbake.


Directions

Cream butter and sugar together. Add eggs and molasses. Stir-in dry ingredients (you can premix them in another bowl, but I never bother). Add fruit and nuts. Drop on spray cookie sheets. Bake at ONLY 325 for about 12 minutes. Let sit on sheet for a few minutes before removing, but do not let them fully harden onto the cookie sheet either.

Serving Size: Makes 50 medium cookies
