Ingredients

    1 15 oz can of pumpkin
    1 cup chopped onion,
    2 cups low sodium beef broth
    1 cup 2% milk
    1 tablespoon fat free promise butter
    1/2 teaspoon pumpkin pie spice
    1/8 teaspoon cayenne pepper
    1 tablespoon sugar free orange marmalade
    1/2 teaspoon nutmeg

Tips

Can be served with toppings, fat free cheese or chopped pecans. Just note that it will add extra calories (fat grams).


Directions

Chop onion into very small pieces. In a medium pan, saute onions with 1 tablespoon of fat free promise butter. Saute until onions golden brown. Add 1/2 tablespoon of orange marmalade while cooking onions.

In a stock pan, combine canned pumpkin, beef broth, onion, and spices. Let cook over medium to low heat for about 30 to 45 minutes. Stir often. Then add milk and orange marmalade and stir until soup is consistent. Cook over low heat for about 5 minutes. Serve, makes about 4 cups.
