Introduction

Number of Servings: 8

Ingredients

    4 skinless boneless chicken breasts cut into 1/2 cubes
    1 each red and green pepper chopped
    1 onion chopped
    2 cloves garlic
    1 12 oz tin low or sodium free,red kidney bean ( do not rinse or drain)
    1 12 oz tin diced tomatoes, low or sodium free
    1 5oz tin tomato paste
    1/2 tsp ground cumin
    1/2 tsp ground coriander
    1-2 tsp chili powder
    1/4 tsp cayenne pepper

Tips

for extra pizazz garnish with 2 tbsp chopped green onions and a dollop of fat free sour cream.


Directions

In stock pot coated with cooking spray, saute on med/high, chicken breast, onion, garlic and spices until chicken almost cooked. Add peppers and saute for another 2-3 minutes. Add kidney beans, diced tomatoes and tomato paste. Mix well and bring to a slight boil, reduce heat and simmer for 20-30 minutes until peppers are tender.
