Introduction

Number of Servings: 4

Ingredients

    9 oz. Frozen Puff Pastry, thawed (1/2 a package)
    1T Bacon pieces
    4 Eggs
    3/4 c. Shredded Reduced Fat Cheese
    salt and pepper to taste
    Fresh chives for garnish


Tips

Havarti and parmesan cheese were used in the original recipe. May also want to add other veggies and spices. (Chives and onions are good).


Directions

Preheat oven to 425. Line cookie sheet with parchment paper. roll out pastry and cut into 4 equal parts. Fold and pinch pastry into round tart shells, place on parchment paper and prick all over with a fork. Bake 8-10 minutes until golden, and allow to cool slightly.
Add cheeses on top of each tart, making a shallow well in the cheese. Crack an egg into each well, top with bacon. salt, pepper. Return to oven. Bake another 10-15 minutes until egg whites are set. Garnish with chives and serve.
