Introduction

Ingredients

    1 lb cooked boneless pork loin - shredded
    1 cup onion, chopped
    1 cup mushrooms, chopped
    1 tsp minced garlic
    1 1/2 cups tomato sauce
    2 chipotle peppers, chopped fine
    1 Tbsp chili powder
    1 tsp salt
    1 Tbsp canola oil

Tips

The longer you cook the chili the better it gets. Works amazingly well in the slow cooker. If you choose the slow cooker method, cook for 6-8 hours on low.


Directions

1. In a large, deep pan or pot, sweat the onions and mushrooms together in the vegetable oil on medium-high heat until softened.
2. Add garlic and cook for 1 minute.
3. Add the chipotle peppers, chili powder, salt and cook for another minute to bloom the spices.
4. Add the tomato sauce, shredded pork and beans and bring to a boil, then reduce to simmer for 20-40 minutes, stirring every few minutes. The longer you cook the chili, the more intense the flavor.

Serve with rice or pasta and a good, hearty bread.
