Introduction

Simple and tasty. I threw this together when I couldn't find the recipe I'd enjoyed before, which was rather more complicated. You could make it healthier by lowering the amount of cooking oil and/or soy sauce. Simple and tasty. Ingredients

    A bit less than 2.5 lb beef, cut into bite-size pieces
    (I used two of the little-more-than-1-lb packages of cut beef pieces from the grocery store)
    A large chunk of ginger - about 6" - peeled and cut into matchsticks
    One leek, sliced
    About 1/4 c Canola Oil for cooking
    Soy sauce to taste (I didn't measure, but I think I used about 3 tbsp)

Directions

Slice all ingredients and place in a large skillet or wok. Cook on medium heat until the meat is done and the leeks are soft-ish (a bit of crunch left in the leeks is good). Enjoy over rice or by itself.
