Ingredients

2T White Chia Seeds
1/2 - 1t instant coffee granules, depending on desired strength
1t hot water
1c Silk Light chocolate soymilk
2T Hershey's sugar free chocolate syrup
Tips
Shaking or whisking the mixture is important so the seeds don't clump together and the pudding will thicken properly.
The longer the mixture sits the thicker it will become. I'll mix some up before bed and have it in the morning with breakfast. Then mix up another batch in the morning before I leave for work. When I get home I have a delicious and healthy snack waiting for me!
Almond and Coconut milks can be substituted for the Soy milk. Sometimes I'll do half soy/half almond for a lower calorie snack.
Directions
Measure 2 Tbsp of Chia seeds into a 2 cup shaker or any container with a lid. In a measuring cup add instant coffee granules & 1 tsp of hot water to dissolve. To coffee add 1c light chocolate soymilk and pour mixture over Chia seeds. Place lid on shaker or conatiner and shake pudding mixture to prevent clumping of seeds. Place container in fridge for 5 minutes, then shake again. Place container in fridge for at least 4 hours so seeds will soak up liquid and swell. When pudding has reached desire consistency stir in sugar free chocolate syrup and serve.
