Ingredients

1.2 Cup All Purpose Flour
1/4 tsp Salt
3 1/2 LBS Chicken Thigh
9 medium slices Bacon
1 Cup Pearl Onions
400 grams Fresh Sliced Mushrooms
4 Cups Chicken Broth
1 Cup Red Cooking Wine
6 Medium Carrots
1 Clove or 1 TBSP Minced Garlic
1/2 tsp Thyme Ground
1 Bay Leaf
3 Sprigs Fresh Parsley
salt & pepper to taste
Cheese cloth
Tips
If you use frozen pearl onions you don't have to peel them.
Directions
1. Mix flour a dash of pepper & salt in a gallon sized re-sealable plastic bag. Set aside.
2. Boil Chicken thighs. Shred meat off of the bones. Toss skin, bones & any other grizzle or fat.
3. Stir fry or saute pearl onions & mushrooms.
4. Peal & cut carrots into rounds.
5. Cook bacon & drain fat. Cut or crumble bacon into small bowl & set aside.
6. Add chicken meat to the plastic bag & fill w/ as much air as possible. Shake bag to coat chicken w/ flour mixture lightly. Set aside.
7. Wrap & secure sprigs of parsley & the bay leaf in a small portion of the cheese cloth.
8. Place all ingredients in a large pot & bring to a boil. Turn heat down & simmer until carrots & pearl onions are tender.
9. Remove the spices wrapped in the cheese cloth & discard before serving.
Serving Size: Makes 8 1&1/2 Cup servings.
