Introduction

This is my own recipe I put together at the last minute. I wanted a dairy free creamy but somewhat cheesy sauce for the pasta. I welcome any tips that would make it taste better. Ingredients

    5lb Chicken Breast (optional)
    1 Can Black Beans (drained & rinsed)
    1 Bag Frozen Corn
    1 Can mushrooms (drained & rinsed)
    1 Can or frozen carrots (drained & rinsed)
    1 Box Barilla Wheat Penne Pasta
    2 Tbsp Tofutti Cream Cheese
    1 Cup Silk Plain Soymilk
    1/4 Cup Lime Juice
    2 Tbsp Cilantro
    3 Tbsp Chili powder
    1 Clove Garlic
    3 Tbsp Paprika
    5 or 6 Slices Rice Vegan Cheddar Cheese (didn't have shreds)
    1 Tbsp Minced Onion (optional)
    1 Tbsp BBQ sauce
    1 Tbsp Chipotles in Adobo Sauce
    1 Can Rotel

Tips

Make sure to rinse all canned veggies to reduce the sodium. You can add more or less chipotle to your level of spiciness. You can also use real milk and cheese if you prefer.


Directions

Cook pasta according to box. Drain pasta and return to pan. Add all ingredients, slowly adding Silk, Cream Cheese, and Rice Slices throughout while stirring. Keep stirring non-dairy milk ingredients until pasta is juicy and creamy.

Serving Size: Makes about 20-1 cup servings
