Introduction

Revised from Julia Child's cookbook "Mastering the Art of French Cooking", this is a slimmed down version of her Duck a l'Orange and it is a tasty dish, excellent for entertaining. Ingredients

    8 shallots
    2 T olive oil
    1/2 t kosher salt and pepper
    12 oz tyson chicken breast
    1/2 c mandarian orange in light syrup
    2 T smuckers sf orange spread
    1 T white wine vinegar
    1 T rosemary, chopped





Tips

I cooked mine a extra 5 minutes because i like the chicken crispy. This mad 4 meals for me and i put 2 portions in the freezer for future use. I served it with tossed salad and crunchy French bread and it was excellent.


Directions

Heat oven to 425 degrees. In a shallow roasting pan toss shallots with 1 T of the oil and 1/2 of the salt and pepper. Cut the chicken breast in strips. In a food processor mix the remaining oil, mandarian oranges, wine vinegar, orange spread and rosemary, pulse until well mixed and pulpy. Pour over chicken in a large bowl and toss until well coated. Add to roasting pan, placing among the shallots and pour remaining marinade over all. Bake until chicken is brown and shallots are tender, approximately 25-30 minutes.
