Ingredients

    Lge sweet potato cut in 5 mm slices
    Yellow pepper thinly sliced
    2 cloves garlic crushed
    2 tbsp coriander
    1 tbsp dried parsley
    20 g cooked chicken breast in bite size chunks
    6 free range eggs beaten

Tips

Just remove the chicken for a tasty vegetarian lunch


Directions

Boil sweet potato for 5 minutes, meanwhile fry chicken, garlic and pepper over low heat until soft. spread sweet potato slices over base of pan and then add eggs with herbs and fry over low heat for about 10 minutes. Finish off under a hot grill until browned.
