Ingredients

    2 large zucchini squash
    ¼ cup Classico Traditional Pizza Sauce (you will not be using the full jar)
    ½ Cup finely shredded Italian Style Cheese – Great Value (again, you won’t be using the full cup)
    10 Hormel Turkey Pepperoni Minis – approximately ¼ oz.
    Best Choice Olive Oil Cooking Spray

Directions

Pre-heat oven to broil. Slice zucchini into ½ inch rounds and lay flat on a foil-covered cookie sheet. Lightly spray the tops of the zucchini with cooking spray. Place zucchini in the pre-heated oven on the second highest rack setting for 8-10 minutes (zucchini should not brown, but should be fairly crisp on top). While zucchini is in oven, chop desired toppings (in this case, the pepperoni). Remove zucchini from oven. Top each zucchini round with ½ tsp of sauce and spread onto zucchini. Top each round with 1 tsp cheese mix. Top half of the rounds with chopped pepperoni. Place zucchini back under broiler for another 5-10 minutes (cheese will bubble and start to brown). Remove from oven and let cool. Enjoy!
