Ingredients

2 cups uncooked oats
1/2 cup coconut sugar or 1/3 cup honey or maple syrup
1/3 cup raisins
1/3 cup chopped walnuts (use any nut/seed desired - pecans are good)
1 scoop protein powder
1 can pumpkin
2 tablespoons milk (plus more if needed)
1 large egg, beaten
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
coconut oil for greasing pan
Tips
Try using different fruit purees besides pumpkin...banana, applesauce, etc...
Directions
1.Preheat oven to 350°.
2.Combine the first 5 ingredients in a medium bowl. Add vanilla, cinnamon, nutmeg, and salt. Stir to mix. Add the milk, pumpkin, and egg; stir well. Pour oat mixture into an 8-inch square baking dish coated with coconut oil. Bake at 375° for 30-40 minutes. Serve warm.
