This sweet sauce is perfect on roast pork, chicken, or salmon.
This sweet sauce is perfect on roast pork, chicken, or salmon.

Number of Servings: 8


    2 cups orange juice
    2 large shallots, minced (about 2 tablespoons)
    1/4 cup apricot jam or all-fruit preserves
    2 teaspoons fresh thyme, leaves only
    1/4 teaspoon cayenne pepper



Place a small saucepan over high heat and add the juice, shallots and jam. Bring to a boil, then reduce heat to medium.
Cook, stirring often, until the mixture has thickened and reduced by half, about four minutes.
Remove from heat, stir in the thyme and pepper, and serve.

Serving Size: Makes 1/2 cup. One tablespoon per serving.
