Ingredients

1 tbsp plus 2 tsp sesame oil
1/2 cup low sodium soy sauce
2 tbsp balsamic vinegar
3 tbsp honey
2 tsp garlic powder
pinch of red pepper flakes
6 boneless, skinless chicken breast halves chopped into bite sized pieces
2 cups chopped onion
1 cup chopped carrot
1 medium red bell pepper
1 tbsp cornstarch mixed with 2 tbsp water
Tips
Top with a sprinkle of toasted sesame seeds (not accounted for in nutritional information).
Directions
1. Prepare marinade by mixing 1 tbsp sesame oil, soy sauce, balsamic vinegar, honey, garlic powder and red pepper flakes in small saucepan. Heat just to blend flavors and allow to cool before covering chicken with mixture. Marinate in fridge for at least a couple hours.
2. Stir fry onion and carrot in 2 tsp sesame oil until almost cooked. Add chopped red bell pepper and cook a few more minutes.
3. Add chicken and marinade and cook until chicken is cooked through. Add cornstarch and water mixture to thicken.
