Ingredients

    Yellow Peppers (bell peppers), 2 pepper, large
    Red Peppers, sweet, fresh, 2 large
    Onions, raw, 1 large, chopped
    Garlic, 1 clove, chopped
    Olive Oil, 1 tbsp
    Cumin powder, 2 tsp
    Tomato Paste, 0.25 cup
    tesco hot and spicy mixed beans, small tin
    Tesco Italian Sieved Passata, half carton
    Carrots, raw, 1 large chopped
    Celery, raw, 1 tbsp chopped

Tips

These peppers can be topped with grated cheese. Half a pepper makes an entree or side dish. Two halves would make a filling main course with some salad leaves.


Directions

Heat oven to 200 deg c
Halve and deseed peppers and put in a roasting dish in oven whilst prepping filling
Heat oil then fry garlic, onion and cumin powder for 5 mins
Add rest of ingredients and simmer for 20 mins
Spoon mixture into pepper halves
Bake for approx 20 mins

Serving Size: 1 x half pepper per person as entree or side vegetable / makes 8 servings
