    1 lb. Sirloin Steak, trimmed and cut into strips
    1 Med. Onion Sliced
    1/2 tsp. Thyme
    2 Tsp. Olive Oil
    3/4 c. Beef Broth
    1 can (14.5 oz.) Diced Tomatoes (undrained)
    1 can Yellow Corn (drained)


Goes well over cooked brown rice, or whole wheat noodles.


Heat Oil to medicum heat in skillet. Add beef and cook just until browned. Add onions and thyme and cook until onions begin to soften. Add broth and cook uncovered for 10 minutes or until the liquid has evaporated. Stir in tomatoes; cover and simmer for 15 minutes, add corn and heat through.

Serving Size: Makes 4 very generous servings
