Introduction

This is a vegetariain version of Buttered Chicken and it is so good. Serve on Brown rice. I will sometimes add mushrooms and green peas which are not inclueded in the calorie count. Ingredients

    2 tbsp vegetable ghee
    1 medium onion chopped course
    6 cloves or garlic minced or finely chopped
    5 ml curry powder
    cayenne pepper to taste
    1 small tin tomatoe paste
    2 cups coconut milk I use one time which is 358 mls
    1 block 500 mls Firm Tofu

Tips

I will add mushrooms and green peas to this to make it a full meal and serve on brown rice or yolk free noodles.


Directions

melt ghee add onions and garlic and saute until onions are soft and golden add curry powder and cayenne pepper. Then add tomatoe sauce and coconut milt and stir to mix well and heat through.
Cut the tofu into chucks and saute until golden brown ( I use a teflon pan to save on fat content) Add too sauce mixture when ready.
