Ingredients

    4 delicata squash, seeded and sliced ¼” thick
    (2 t plus 2 T olive oil, divided)
    (1 t cumin)
    (½ t kosher salt)
    (2 t butter)
    ½ medium red onion, thinly sliced
    (1 T balsamic vinegar)
    2 c baby spinach

Directions

Heat oven to 400° F. Place squash on baking sheet. Cook for 10 minutes or until tender. Combine 2 t olive oil, cumin and salt. Drizzle over squash. Heat butter in skillet. Add onion; cook until soft and slightly caramelized. Combine remaining 2 T olive oil and balsamic vinegar. Dress squash lightly with mixture. Toss with onions and baby spinach.
