Ingredients

3 Zucchini sliced with a cheese slicer lengthwise
1 large cucumber, shredded
3/4 carrots shredded
1/2 cup dry unsalted cashews
1tsp lemon juice
1/4c water
1 avocado
1/4 cup Cilantro, chopped
1/4 cup grape tomatoes
1 tsp garlic powder
1 tsp onion powder
1 tbsp Chipotle Cholula
Directions
Soak Cashews overnight.
Puree cashews and lemon juice and water until smooth. Set Aside.
Puree avocado, tomatoes, cilantro, garlic powder, onion powder and Cholula. Set Aside
Grate cucumbers and carrots. Set Aside.
Slice Zucchini lengthwise with a cheese slicer to make thin strips.
Lay 6-8 Zucc strips layered one half on top of the other. Spread Cashew Sauce, and Guac mix along the top across all strips. Then place some of the carrots and cucumber. Roll like a burrito and enjoy!
