Ingredients

Crust:
1 cup pecans
1/2 cup almonds
4 tbsp butter, melted
pinch salt
1/2 tsp cinnamon
Filling:
15 oz pumpkin puree
2 eggs
1/2 cup honey
1/2 cup coconut milk
2 tsp cinnamon
1/4 tsp ground ginger
1/8 tsp ground cloves
Directions
Preheat oven to 350'
To make the crust:
In a food processor, chop together the nuts. They should be rougher ground than a nut flour, but not too large of pieces or your crust won't hold together.
In a large bowl, mix the nuts, the melted butter, the pinch of salt and the cinnamon together.
Press into a pie dish.
Bake in the oven for about 10 minutes.
To make the filling:
In your food processor, mix together all filling ingredients and blend well for about 7-10 minutes. It will get a bit thicker as it blends.
When crust is ready, remove from oven and pour filling into it.
Bake pie at 350' for approx 45 minutes. Check at 35 and 40 to make sure it's not overcooking.
Filling should be firm when cooked through.
