Ingredients

Chicken Breasts, filleted in half
Egg whites, 2-3
Progresso Bread Crumbs- Italian Style - about 1/2 a cup for coating (I place more than needed in the bowl)
Vegetable oil (2 Tbs)
Tomato Sauce (1 16 oz can)
Italian Seasoning
Salt
Pepper
Italian Blend Cheese, or mozzarella/Parmesan (3/4 cup)
Tips
This dish makes delicious leftovers.
Make sure not to overcook the chicken! I like to serve this with either fresh steamed veggies or pasta. The sauce is delicious after it cooks!
Directions
Half the chicken breasts as if you were filleting them.
Heat oil in pan.
Place egg whites in a bowl and whisk until homogenous. Place bread crumbs in another bowl. Dip the breasts in egg white mixture then breadcrumb mixture, covering completely, and fry at medium heat in the vegetable oil
Mix Italian seasoning, salt, and pepper with tomato sauce and pour half of the can in the bottom of a 9x 11 pan (I coat my pan with foil so clean up is easier)
Place cooked chicken breast halves in the pan. Top with 1/4 cup cheese each, then pour the rest of the tomato sauce in the pan, around the chicken breasts (not on top of the cheese)
Place in preheated oven at 350ºF for about 11 minutes, until cheese melts.
Serving Size: Makes 3 chicken breast halves
