Ingredients

    1 onion diced
    2 cups chopped mushrooms
    2 Chicken apple chardonnay sausages (precooked)
    1 can organic pumpkin
    4 cups low sodium vegetable broth or chicken broth
    .25 cups of coconut milk unsweetened
    2 tbsp olive oil
    3 tsp sage
    2 tsp thyme
    salt and pepper to taste

Tips

Not included in recipe - I top with a little Fage fat free yogurt and serve with a salad. It makes a nice hearty and filling dinner.


Directions

saute onion and mushroom in olive oil until brown. Add sausage and let saute for 2 more minutes. Add the rest of the ingredients and let simmer for 30 minutes so flavors can mix. Serve with fresh sage sprinkled across top.
