Introduction

Makes two 9x5 loaves, 16 slices per loaf.

Ingredients

    topping:
    1 Tbsp flour
    5 Tbsp brown sugar
    1 Tsp cinnamon
    1 Tbsp Canola oil

    Sift:
    3 C flour
    3/4 tsp salt
    2 tsp baking soda
    3 1/2 Tbsp pumpkin pie spice


    Mix well in separate bowl:
    16 oz canned pumpkin
    1/4 C canola oil
    1/2 C unsweetened applesauce
    2 1/4 C sugar
    8 egg whites
    Toss in 2 chopped granny smith apples

Directions

mix topping set aside.
sift together dry ingredients.
mix wet ingredients well with mixer.
fold in apples.
stir wet into dry until mixed well.
sprinkle topping evenly over both loaves.

bake at 350 degrees for 45-50 minutes.

Serving Size: 2 loaves= 16 slices each
