Introduction

Ingredients

    -2 packets yeast
    -2 c. buttermilk (warm)
    -.5 c light butter (melted)
    -1/3 c. honey
    -3 c whole wheat flour
    -1 tsp salt
    -1 tsp baking soda
    -2 c. all purpose flour (divided)

    -2 tbsp margarine (melted)
    -1 tbsp honey

Directions

Dissolve yeast in buttermilk. Add melted butter and honey. Add whole wheat flour, salt, and baking soda. Mix until combined. Slowly add flour until a soft dough forms. Turn out onto a floured surface and knead. Put into a greased bowl. Turn to grease all sides. Dampen a towel with warm water. Wring out excess water. Cover the bowl with the towel and set in a warm place. Let the dough rise for an hour (I set my bowl on the back of the stove while the oven is preheating).

After an hour, punch the dough down. Turn onto a floured surface and knead a few times. Break off small balls of dough and place on a greased cookie sheet. Put the rest of the dough back into the original bowl and recover. Put the cookie sheet in a warm place and allow to rise an additional half hour. The rolls should be about double their original size. Brush the rolls with the margarine honey mixture. Bake the rolls for 12-15 minutes. While a batch of rolls is baking, put new dough on another cookie sheet and let rise.
