Introduction

Ingredients

    1 lb lean ground beef
    1 1/2 medium onions chopped
    2 cloves garlic minced
    2 cups of shredded broccoli stems
    4 cups of chopped fresh tomatoes (packed with juices)
    1 tsp paprika
    1 tsp cumin
    3 tsp chili powder
    1 tsp oregano
    1 1/2 tsp salt
    1 tsp Worcestershire sauce
    3 cups of black beans
    1 1/2 cups of chickpeas

Tips

I had a lot of fresh tomatoes from the garden, so used fresh. I also prepare my own chickpeas and black beans from their dry form. You may need to lessen the salt if you use canned tomatoes and beans. Another thing that I always have on hand is the broccoli stems. Instead of throwing these away, I peel the tough parts off and shred the stalks in the food processor.


Directions

1. Saute meat, onions, garlic and broccoli until done.

2. Add remaining ingredients and simmer for 1 1/2 hours.
