Number of Servings: 10

Ingredients

    Shrimp, cooked, 2 lbs
    Garlic, 3 cloves, diced
    *olive oil, crushed red pepper flakes,
    garlic, onion powder (opt), sea salt & pepper

    Black Beans, 1 can drained & rinsed
    Sweet Corn, Fresh, 2 cups, or 1 can drained
    Green Onions, 1 bunch, white & green diced
    Parsley, partial bunch chopped
    Kraft Mexican Style Shredded Cheese, 1 cup

    Flour Tortillas, 10 tortilla, medium (approx 6" dia)

    Olive Oil, 1/2 cup, divided

Tips

Serve with Yum-Yum sauce (Food Lion carries this brand in the dressing aisle) or fat-free balsamic vinegrette for less calories.


Directions

Preheat oven to 400 degrees
Toss shrimp with olive oil, red pepper, garlic, onion powder, sea salt & pepper.
Bake shrimp on foil lined cookie sheet for 10-12 minutes; once cool - rough chop them.

Combine beans, corn, garlic, green onions, & parsley.

Cover the bottom of a non-stick skillet with olive oil and turn on medium heat.

Fill each tortilla middle with shrimp, bean/corn mixture, and cheese. Roll each one up, tucking the sides in as you roll. Place each tortilla, seam side down, in non-stick skillet. Brown on each side.
