Ingredients

    3 cups chicken broth
    1 medium onion, chopped
    2 stalks celery, sliced
    2 carrots, thinly sliced
    1 16-oz can sliced green beans, drained
    1 small zucchini, sliced
    1 16-oz can diced tomatoes
    1 Tbsp Italian seasoning
    1 Tbsp garlic powder
    Sea salt and pepper, to tast

Tips

These make HUGE and very filling servings for a comparatively small amount of calories. Choose low sodium/low fat broth for an even healthier soup :)


Directions

-In a large pot or Dutch oven, cook the onion, celery, and carrots in the chicken broth.
-Add the green beans and zucchini; cook, covered, for 10-15 minutes
-Add the tomatoes and seasonings; cook an additional 10 minutes
