This is a turkey version of my Italian Chicken Meatloaf recipe that is truly delicious and made in a huge batch of 8 small meatloaves - perfect for making ahead, freezing, and thawing on a busy night! Ingredients

About 2 kg ground turkey
About 1 kg ground Italian sausage
4 cups mozzarella cheese
8 cups Italian bread crumbs
4 eggs
4 cups tomato pasta sauce
1/2 cup pesto sauce
4 cloves garlic, minced
2 tbsp Italian seasoning
3 tbsp dried onion flakes
Tips
Freeze most of the loaves individually once they have cooled to have a meal ready to heat up on a no-cooking day.
The servings are large - it's easily enough for lunch to have half a serving - 1/8 of a loaf - and be satisfied.
Directions
In a large bowl, mix together ground meat, cheese, and bread crumbs, removing sausage from casings.
In a second bowl, beat eggs. Add tomato sauce, pesto, garlic, seasoning, and onion flakes and stir.
Pour tomato sauce mixture into meat mixture and combine until consistent.
Place in large pans and bake at 350F for 60-75 minutes or until 170F in the middle. Divide into 8 loaves.
Serving Size: Makes 8 loaves, each divided into four equal servings.
