Number of Servings: 6


    2 cups cooked cubed or shredded chicken
    1 cup chopped carrots
    1 cup chopped celery
    1 cup chopped mushrooms
    1/2 cup chopped onion
    1/2 bag of frozen peas, thawed
    1/2 bag of frozen broccoli, thawed
    2 Tbs olive oil
    1 Tbs unsalted butter
    2 cloves minced garlic
    6 cups low sodium chicken broth
    2 cups water
    3/4 cup uncooked quinoa
    1tsp thyme
    1 tsp basil


You can do as I do and cook two large chicken breasts in boiling water. When done, debone, remove skin, and chop or shred. Add only 4 cups of prepared chicken broth to the broth made by the boiling chicken. Add up to 2 cups of water if needed. This is less expensive than having to buy extra broth and canned chicken.


Saute carrots, onions,and celery in oil and butter over medium heat about 5 minutes. Add mushrooms and garlic, saute an additional 5 minutes. Pour broth and water into large pot, bring to a boil. Add in sauteed veggies, broccoli, peas, quinoa, basil, and thyme. Continue boiling for 30 minutes. During last 5 minutes add in cooked chicken. Serve hot.
