    3 cups red peppers cut in chunks
    1 cup green peppers
    3 cups zucchini and summer squash
    2 cups of onions chopped
    2 tbsp olive oil
    1/2 salt
    pepper to taste

Directions

heat olive oil in frying pan
add vegtables and cook to desired tenderness approx. 20 minutes.
