Ingredients

    8 red potatoes
    9 oz non-fat plain Greek yogurt
    1/2 cup non-fat cottage cheese
    1/5 tablespoon grape seed oil
    1 cup low fat shredded cheddar cheese
    1/2 cup low sodium chicken broth
    1 tablespoon black pepper
    1 teaspoon salt

Directions

Poke each potato several times with a fork. Then place all potatoes in a large stock pot, and fill with water until all potatoes are covered. Bring water to boil, and boil for about 30 to 45 minutes, until potatoes are soft.

Place potatoes into a large bowl, and add Greek yogurt, cottage cheese, grape seed oil, and chicken broth. Mix until the mixture is even. Last mix in the cheddar cheese and spices. Serve warm.
