Ingredients

2-3 sprays of Pam cooking spray
2 Tbsp. bell pepper, chopped (small)
1/4 cup onion, chopped (small)
70g (about 2.5 oz) precooked potatoes, cubed
1 egg, whole
1 egg white
1-2 tsp water
1/2 oz cheddar cheese. shredded
Tips
To save on cooking time, I usually bake/roast a couple of extra potatoes when I make them for dinner, so that I can use them in other recipes, like this one.
For a complete, vitamin and protein rich breakfast, include one or two strips of turkey bacon and half a grapefruit. (Entire breakfast = about 325-340 calories).
Simply double everything (and use a slightly larger pan) if you are cooking for two.
I have used the ingredients that I had on hand, feel free to use whatever vegetables you have in the refrigerator.
Directions
Spray small skillet with cooking spray. Heat pan over med. heat until warm. Add peppers and onions. Cook until soft, about 5 min. Add potatoes and cook until heated through, about 5 min.
In small bowl, combine whole egg, egg white and 1-2 tsp. of warm water. Whip with a fork until frothy and add to pan. Stir the mixture constantly with a rubber scraper, making sure to scrape the bottom clean. The eggs will cook very fast. Add Pepper, salt, and garlic powder as you are stirring.
Move entire mixture to plate and sprinkle cheese on top.
