    1.5 cup Oatmeal, uncooked
    1.25 cup White Whole Wheat Flour
    1 tsp Cinnamon
    1 tsp Baking Powder
    3/4 tsp Baking Soda
    3/4 cup 2% Milk
    1/3 cup Palm Coconut Sugar (or substitute Brown Sugar)
    1/4 cup Applesauce, unsweetened
    1 egg white
    80 Ghiradelli Chocolate 60% Cacao Bittersweet Chocolate Chips (about 1 cup)


Preheat oven to 400 degrees and line muffin pan with 12 paper baking cups. Mix together oats, flour, cinnamon, baking powder, and baking soda. Add milk, sugar, applesauce, egg white, and chocolate chips. Mix just until combined (don't over-mix). Bake 15 minutes.
