Ingredients
-
4 oz. 93 % lean ground beef
1 small onion diced
1-2 cloves garlic (optional)
8 small fresh mushrooms sliced thin
2 T Fage Greek Yogurt ( or similar no fat plain yogurt)
1/4 cup rose wine
1/2 t salt
1 T McCormick's salt free all purpose seasoning
1/4 t pepper
water
Directions
In a non-stick saute pan brown you ground beef in a couple tablespoons of water, as it cooks add the diced onion and optional garlic until the beef cooks through and the onion is soft. Season to your liking with the salt, pepper and McCormick all purpose seasoning.
Once that is cooked, push to the side of the pan and add the mushrooms pouring the wine over top of the mushrooms so they simmer and cook until the wine is mostly evaporated over a medium to low heat.
Once the mushrooms are cooked to your liking add approx. 2 tablespoons of the yogurt and blend together, remove from heat once heated through and enjoy. If you like it more saucy - don't allow the wine to completely evaporate or add a little more.
This created on serving for just myself. And now feel quite satisfied and content.
I enjoyed this over steamed brown rice with a vegetable and felt like I was eating the old "less healthy way" with out the extreme fat and calories - a real treat on a cold night.
Note: I was unable to find a Rose' wine in the "add this ingredient - and my bottle didn't list the nutrition facts - but using wine not cooking wine limits the sodium.
