Ingredients

3 lbs chicken breast, pounded flat
2 TBL Olive Oil
2 10 Oz. packages frozen spinach, thawed, squeezed dry
1 14 oz. can of Artichoke hearts, drained
8 oz Ricotta Cheese
1/4 Cup Italian Three Cheese Blend
2 tsp Garlic and Herb Mrs. Dash
1 tsp Oregano
Fresh garlic to taste, smashed
32 oz. low sugar marinara sauce
Tips
Can also be fashioned into stuffed chicken breasts.
Directions
1. Preheat oven to 350 degrees.
2. Pound chicken breast flat with a mallet.
3. Grease 13 x 9 glass baking dish with 2 TBL of olive oil
4. Place 1/2 cup marinara sauce in the bottom of the pan. Cover with 1/2 of the chicken breast.
5. Mix Spinach, artichoke hearts, ricotta cheese, three cheese blend, Mrs. Dash, oregano and garlic in a separate bowl. Spread over chicken.
6. Cover spinach layer with remainder of chicken.
7. Cover with marinara sauce. Bake at 350 until internal temperature reaches 170 degrees.
