Number of Servings: 4

Ingredients

    3/4 boneless skinless chicken breast, cut into bite size pieces
    2 tsp. vegetable oil
    3/4 cup onions chopped
    1 1/2 cups of carrots finely chopped
    3/4 cup red bell pepper finely chopped
    3/4 cup celery finely sliced
    1/4 cup canned chopped green chilies
    3/4 tsp dried oregano
    1/2 tsp ground cumin
    1/4 tsp salt
    1/8 tsp pepper
    16 oz. can cannellini beans rinsed
    14 1/2 oz. can fat free low sodium chicken broth
    3 Tblsp pesto

Directions

Saute" chicken in nonstick pan with olive oil
Combine all ingredients except pesto sauce in the slow cooker
Cook on low 6-8 hours
Stir in pesto just before serving

Serving Size: make 4 1 1/2 cup servings
