Ingredients

    1 lb fresh cod fish divided in half
    1 bell pepper, julienned
    4 green onions, sliced into 1" pieces including green tops
    1 cup fresh mushrooms, roughly chopped
    1/2 cup (about 10) snow peas
    2 Tbl unsalted butter, divided in half
    Cajun seasoning spice
    2 Parchament paper approx 14" square

Tips

Practice with the parchament paper if you are not used to this. You can use staples to hold it together if your folding technique needs help. The idea is to get the papillote (paper pouch) sealed well to keep in the steam and flavor. If you use staples, is probably best to remove them by cutting them away with sissors before serving...or warn your guests.
If cajun seasoning isn't your favorite, you can use any number of spices or herbs for this dish. The fish will easily take on a variety of flavors.


Directions

Pre-heat oven to 350 degrees.
Rinse fish under cold water and check for pin bones. Divide fish into 2 8oz portions.
Place julienned peppers and snow peas in steamer and microwave on high for 2 minutes
Place the fish in the center of parchament paper. Top each with half the steamed veggies, mushrooms and onions.
Season with cajun seasoning mix and dot with 1 tbl butter.
Fold parchament paper around fish mixture by bringing opposite edges together, then folding up the remaining edges to make a package.
Place papillote on baking sheet.
Bake until fish is flaky, about 30 minutes.
