Ingredients

    3 cans of concentrated tomato soup
    3 equal parts skim milk
    24 ounces salmon, cut into chunks
    1 tablespoon garlic powder
    1 tablespoon dry basil

Tips

Feel free to use reduced sodium tomato soup, or ready-to-eat tomato soup. Just make sure it is enough for six servings. You can always freeze individual portions.


Directions

Mix the tomato soup with milk as directed on the can in a medium sized soup pot. Add the fish and the seasonings. Heat on medium high heat-stirring constantly to prevent scalding and fish from sinking to the bottom. Once the soup starts to boil, continue to cook for about 3-5 minutes to ensure the fish is cooked through.

Serving Size: Makes six 1.5 cup servings
