Ingredients

3 Lg Egg Whites
6 Pieces fully cooked bacon
1 Cup Shredded Cheese
6 8" Flour Tortillas
Tips
These are so easy to make in advance and heat in the morning - just a trip through the toaster is all it takes to have a hot healthy breakfast :)
Also, if you're using a skillet, flipping will be the biggest challenge - your eggs will want to fly out. You can try sliding it onto a plate to help flip - or I've even slid it onto a plate and then flipped the skillet over the plate and held them together to flip it back.
Directions
Scramble the eggs and egg whites, chopping them finely when cooked. Meanwhile, microwave the bacon until it's crispy - then crumble or cut it into tiny pieces to add to the eggs. Here I use a Quesadilla maker, but you could do this in a large skillet or on an electric skillet. Place 1 flour tortilla on skillet or maker - sprinkle with shredded cheese (appx1/6th of a cup). Spoon egg and bacon mix over the tortilla, sprinkle another 1/6th of a cup of cheese on top, place another tortilla over the cheese. Grill until crispy and if using a skillet, flip CAREFULLY to grill on the other side. The cheese will help it stick together, but you might need to use 2 spatulas. If using a maker, just wait until it's browned on both sides and remove, repeating the process 2 more times - making a total of 3 large quesadillas. Cut with a pizza cutter into 6 triangles each.
