Introduction
This is a very quick and easy bread pudding. It calls for raisins but I have made it with sliced bananas too. The calories count would be different than the original recipe but it was really good and different. You can use different types of bread but again you would have to re-calculate calories. Ingredients

4-5 slices of bread (4 cups),cubed,packed
1/2 cup Brown sugar
1/2 cup raisins
cinnamon, to taste
2 cups skim milk
2 eggs, beaten
2 teaspoons vanilla
Tips
I let the milk mixture cool for just a few minutes (like 2 or 3) then whisk in the eggs.
Directions
Put bread in a 2-qt casserole dish. Sprinkle with brown sugar,raisins & cinnamon.
In microwave safe measuring cup microwave milk,margarine & vanilla for 4 minutes on high.
Beat the 2 eggs.
When milk mixture is heated RAPIDLY stir eggs into milk mixture. (I use a whisk and pour and whisk very fast)
Pour milk/egg mixture over bread in casserole.
Microwave on medium-high for 9-12 minutes.
Serve warm or cold. Enjoy!
